Today is apparently national pisco day in Chile, which we thought was, like, everyday in Chile (it may be, since it seems there is also a National Pisco Sour Day in February). But no matter. We don’t care a whit if that is a legitimate thing. Does it matter? This is one BS day we can get behind if it gets more people making and drinking pisco cocktails. Here we offer our take on the classic pisco sour, made at the bar at La Condessa in Napa Valley using Encanto, a pisco made by Duggan McDonnell, owner and barkeeper of San Francisco’s Cantina.
