Today is appar­ently national pisco day in Chile, which we thought was, like, everyday in Chile (it may be, since it seems there is also a National Pisco Sour Day in February). But no matter. We don’t care a whit if that is a legit­imate thing. Does it matter? This is one BS day we can get behind if it gets more people making and drinking pisco cock­tails. Here we offer our take on the classic pisco sour, made at the bar at La Condessa in Napa Valley using Encanto, a pisco made by Duggan McDonnell, owner and barkeeper of San Francisco’s Cantina.
